well you can obviously have nachos, and cheese sauce over broccoli is great. my favorite cheese sauce is a full log of velveeta and 2/3 cup of milk and 1/2 cup of port wine in a fondue pot or small crock pot. and just dip anything in it. its great with doritos or pretzels or pork rinds.

If you're talking fondue,
~ Mini quiches
~ Pretzels
~ Chunks of cubed chicken, ham, or beef
~ Practically any vegetable. Steamed brussel
sprouts and asparagus tips are great!
~ Deep-fried sea scallops wrapped in bacon (held
together with toothpick). These are way yummy!
~ Add pepper jack cheese to your regular cheese
sauce for a tasty change.

I love leeks with cheese sauce over the top, and then grilled, also the ever trusty cauliflower . I like leedammer cheese or emmenthal but a tasty cheddar is always an English favourite!

Cheese sauce can be served with just about anything. Trust me I am a cheesehead(literally I own three cheesewedge hats). I have had cheese sauce on everything you mentioned as well as just a dip for chips and even for fruit. The fruit one was a cream cheese thing though. I prefer a sharp cheddar but you can really use anything you like. Cheese sauce is awesome on various veggies. I like to add either a little hot sauce or else some salsa to my cheese sauce for a little zip. Don't forget the various mexican dishes you can use cheese sauce on. Cheese sauce is also really good on hotdogs. Like I said you can serve cheese sauce with just about anything, the only limit is really your imagination.
I have included the cream cheese dip recipe cause I really like that one.
CREAM CHEESE DIP (FOR FRUIT)
1 (8 oz.) pkg. cream cheese
1 reg. jar marshmallow cream (1 pt.)
1/8 tsp. ginger
Fresh fruit
Bring cream cheese to room temperature; cream and mix with marshmallow cream and ginger. Serve with fresh fruit as dip.

I don't have a recipe either, and I keep making it to pour on top of a slice of toast, topped with baked beans, topped with sautéed mushrooms, and, well, the cheese sauce.
Vegetables, too, of course -- I mean, as things that can be cheese-sauced. Cauliflower and broccoli especially.
