a good vegetable dish that goes with everything is Potatoe be they fried,roasted,boiled,mashed, in a salad,or made into potato cakes the potato goes with every type of dish

Mediterranean Roast Vegetables.

Chopped Aubergine, Courgettes, red/yellow and green Peppers, Onions and Tomatoes drizzled with a little olive oil and roasted on a flat tray....yum! precooked diced potatoes also go really well mixed in with above.

2 cans of Blue Lake green beans, drained ( I use no salt added)
2 T. butter
2 T. Hormel bacon bits
Mix together and microwave until hot (about 2 minutes).

This can't be beat for ease of preparation, and I can't think of a main dish it wouldn't go with.
