With 10 being a total anal-retentive conservative Christian fundie, and 1 being a pot-smoking liberal hippie, where does Jesus fall in your estimation?

Well, to go with the more classic version of liberalism and conservativism (i.e. ignoring what the modern media and politics are associating with them), I'd give Jesus around a 2.5, as liberalism denotes a desire for change, and that is what Jesus based his life around while the Pharises were the time's conservative polar opposite. Of course there were more dramatic examples of liberalism at the time, i.e. John the Baptist, and various other more extreme ascetics, but he was a pretty good one.

He doesn't. You are talking about something physical and since the Messiah resurrected and is a "life giving" spirit, the question is not valid.
