In the book of Leviticus, God sets requirements for seafood. Sea creatures must have scales and fins, and shellfish don't fit this requirement, and are thus, 'treif', or 'unclean', and not fit for consumption.

Shellfish is apparently unclean. I don't know that the OT explains why or how, but God said it's unclean. So, they can't eat it.

I'm Jewish. The only reason I don't eat shellfish is because I hate seafood. I'm guessing you mean kosher jews. They don't eat it because its not kosher. :-P
