For commercial brands, has to be Hennessey Paradis.
As good or better than Louis XIII or any of the $1000.00 a bottle types. Smooth as silk and REALLY tasty!
Also look for Frapin, Deret, Ferrand, Fussigny, Hine, Kelt, Montaigne or numerous small pruducers who don't have fancy packaging but have superior products.

Brands like Martell or Remy martin greatly overcharge you for a product that's not even their own. They buy stock from local cognac distillers and make it into their own blend. For that "service" they multipy the original price 4-5 times.
If ever you visit the region of Cognac you can visit a distillers and probably pick up a bottle of excellent XO(extra old) for about 20 pounds. If you check your local stores you won't find any known brand to offer XO under 80 pounds. I've done this every time I was in Cognac and have always pleasantly surprised by different distillers.

Look for cognac that has been aged for 50-60 years.
Warning, this will rack up to possibly 5000 dollars per bottle.

No question . . Louis XIII . . commonly called "louis tres" Not only is the cognac made for gods, the bottle itself is leaded crystal worth quite a bit of money.

Lower end... cognac that is good enough for sauces....Salignac.
don't have the money to buy the good stuff....don't drink it anyway...just cook....so the cheaper stuff works for me.
