If you can get an extra piece of the floor tile I would take that along with a piece of the copper to a paint store, hold them together and just scan them over the color samples until something strikes you. The other alternative I would suggest is using a deep rich color close to the color of the cherry wood in the dining room. You know what...go with that...perhaps with a sponging effect in a metalic copper tone over it to mute it a bit....

I immediately thought of soft yellow - before I read the details to your question. I would still consider soft yellow to continue the flow from the dining room. It's kind of hard to say without seeing the rooms, but if not the yellow, then maybe a lighter shade of the same color tone of the copper panels. You could also pick up one of the beige colors from the tile. Kitchens seem to look better if the colors aren't too dark, so if your cabinets are medium to dark, then I would definitely choose a lighter color to paint the walls.

a light terra cotta shade would look nice, as would a warm light tan. Nothing too dark. Yellow and white kitchen and bathroom walls tend to improve a home's ability to sell quickly, so you will want the option of repainting in a light color.

I have an eggshell color in my kitchen with honey oak cabinets. I would suggest the same coloring for your kitchen.

a light butternut-squash color... sort of like a burnt pastel sunflower.

I'd go with seagreen or a medium seagreen.
