I am sure that you must live some place where you cannot get fresh butter. So with this being said I would use frozen. Just be sure to thaw it 7-8 hours in your fridge before hand. Most brands are pretty equal unless it is a mix of margarine and butter. Go with the 100% real butter and stick to the unsalted(no pun intended) As for canned I know that some companies say they are "butter" but are really "ghee" Ghee is Clarified butter that has been cooked longer to remove all the water so it can be stored for longer periods (both refrigerated and at room temperature). Popular in india. Can be used for deep frying.

when doing any kind of baking or cooking I always use land o lakes butter in the regular dairy case at the grocery store. cooking light magazine for January 2007 has a great article on butter and cooking with it and what types are best for what purpose.

I am not sure what u mean by frozen or canned butter but most recipes call for unsalted butter not margarine or shortning

The regular butter you get in the dairy case.. I like the ones that come in sticks, so that measuring is real easy and not a mess.
