Beef & Cheese Burritos
Quick and easy and the kids will love it!
1-1/2 lbs. ground beef
or - 1 tub fully cooked shredded beef
1-1/4 cups prepared thick and chunky salsa
1/2 lb. Velveeta Pasteurized Process Cheese, cut into 3/4-inch chunks
8 flour tortillas (approximately 8 inches)
Thinly sliced lettuce
Chopped tomato
Ripe olive slices
In large nonstick skillet, brown ground beef over medium heat 8-10 minutes or until beef is no longer pink.
Pour off drippings. Stir in salsa and Velveeta. Heat until cheese is melted.
To use fully cooked shredded beef, stir into salsa and Velveeta. Heat until cheese is melted and proceed as below.
To serve, spoon 1/3 cup beef mixture in center of each tortilla. Fold bottom edge up over filling. Fold sides to center, overlapping edges.
Top with lettuce, tomato and olive slices as desired.

Take one of those shells and cheese dinners. Follow the recipe, but add about 1lb of ground beef to it after its done. Of course, that would be cooked ground beef. Every bite tastes like a cheeseburger.

Asian Ground Beef and Pepper Saute
INGREDIENTS
1 cup dry jasmine rice
2 cups water
1 pound lean ground beef
1 tablespoon olive oil
1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 cup chopped fresh parsley
2 large cloves garlic, thinly sliced
2 tablespoons minced fresh ginger root
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup beef stock
1 tablespoon low-sodium soy sauce
1 teaspoon chile paste
1/2 teaspoon Worcestershire sauce
DIRECTIONS
1. In a medium saucepan, bring the rice and water to a boil. Cover, reduce heat, and simmer 20 minutes.
2. In a skillet over medium heat, cook and stir the ground beef until evenly browned. Drain, and set aside.
3. Heat the olive oil in the skillet over medium heat. Stir in the red bell pepper, green bell pepper, parsley, garlic and ginger. Season with red pepper, salt, and pepper. Cook and stir until tender.
4. Return the beef to the skillet. Mix in the beef stock, soy sauce, chile paste, and Worcestershire sauce. Cook and stir until thickened and heated through. Serve over the cooked rice.

Ground Beef Stroganoff:
½ day 20 min prep
6-8 servings
2 lbs ground beef
2 medium onions, chopped
2 cloves garlic, minced
1 (4 ounce) can sliced mushrooms, drained
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup beef bouillon or consomme
3 tablespoons tomato paste
2 tablespoons flour
3/4 cup sour cream, mixed with the flour
1. Brown ground beef in large skillet; add onions, garlic and mushrooms.
2. Saute until onion is golden brown.
3. Put in Crock Pot with all remaining ingredients except sour cream and flour.
4. Stir thoroughly.
5. Cover and cook on low 6-8 hours (or on High 3 hours).
6. Stir in sour cream and flour 1 hour before serving.
7. Serve over hot buttered noodles or rice.

HOMEADE TACO DIP
this sounds plain....but mmmmmmmmmmm!!!
...here's the dip
fry some hamburger meat, onion(red or white), green pepper, mushrooms.
when meat is cooked add a jar of your favorite salsa(aprox 2 cups if you buy the huge sized jars)
put half this in a baking/casserole dish, put a tub of cottage
cheese over that, put the rest of the meat over the cottage cheese, and top with shredded cheese
( i use either cheddar, mozzarella, or marble)
bake or microwave until cheeses are melted (oven about 20 mins...microwave about 5 mins)

Brown 1# hamburger & drain. Add chopped trinity(onions,peppers,celery). Saute until onions are transparent. Add seasonings of your choice-garlic powder, parsley, chives, marjoram, thyme, onion powder, season salt. All or your choice. Add a can of diced or stewed tomatoes. Add a can of water. Bring to a boil. Add either minute rice, macaroni, egg noodles or pasta noodles., Cover and cook until tender. Serve with a tossed salad and garlic bread or just plain bread&butter. This is a great comfort food with lots of optional varities.

I think just about everyone enjoys "American Chop Suey" i.e., ground hamburg cooked with peppers and onion, a clove of garlic, a can of stewed tomatos and a small can of tomatoe sauce sauteed together and tossed over elbow macaroni. Topped of with a little grated parmesean cheese. Very satisfying and budget stretcher.
