Butter Pecan Bread

* 2 1/4 cups sifted all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg
* 1 cup light brown sugar, packed
* 1 egg, beaten
* 1 cup buttermilk
* 2 tablespoons melted butter
* 1 cup chopped pecans


Sift together the flour, baking powder, soda, salt, and spices; blend in brown sugar.

Combine egg, buttermilk, and butter; add to flour mixture, stirring to blend well. Stir in chopped nuts. Turn batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350° for 45 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

Cherry Pecan Bread (You can leave out the cherries if you like)

INGREDIENTS
1/2 cup butter or margarine, softened
3/4 cup sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup chopped pecans
1 (10 ounce) jar maraschino cherries, drained and chopped
1 teaspoon vanilla extract

DIRECTIONS
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; add to the creamed mixture alternately with buttermilk. Stir in pecans, cherries and vanilla. Pour into a greased and floured 8-in. x 4-in. x 2-in. loaf pan.
Bake at 350 degrees F for 65-75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

1/2 cup warm water
2 packages dry yeast
1 3/4 cup lukewarm milk
3 tablespoons sugar
2 tablespoons shortening
1 tablespoon salt
7 to 7 1/2 cups flour
1 bell pepper, diced
1/2 cup pimento
1/2 cup chopped onion
2 cups grated cheese
3/4 cup chopped pecans

Dissolve 2 packages yeast in 1/2 cup warm water. Mix milk, sugar, salt and shortening well. Add yeast. Add half the flour and mix well. Add the remaining flour a little at a time, mixing well after each addition. Add peppers, pimento, onions, cheese and pecans. Work in only enough flour to make handling easy. Knead until smooth. Place in a clean greased bowl. Let rise until double in bulk. Knead again for about 5 minutes. Divide dough into two equal parts. Shape into a loaf. Place in well-greased loaf pan. Bake at 350 degrees F for about 20-25 minutes, until nicely brown. Remove from oven and grease loaves with margarine.

Here are a few that I have made:

Maple Pecan Bread

2 1/4 cups Gold medal all-purpose flour
3/4 cup sugar
1 cup half and half
1 teaspoon maple extract
3 tablespoons vegetable oil
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup chopped pecans



**MAPLE GLAZE**

1/2 cup powdered sugar
2 teaspoons half and half or milk (up to 3 tsp)
1 teaspoon maple extract
2 tablespoons chopped pecans

Mix all ingredients until smooth and thin enough to drizzle.

Heat oven to 350º. Grease bottom only of loaf pan, 8 1/2x4 1/2x2 1/2 inches or 9x5x3 inches.

Mix all ingredients except pecans and Maple Glaze in large bowl with
spoon; beat 30 seconds. Stir in 1/2 cup pecans. Pour into pan.

Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf of pan; remove from pan to wire rack. Cool completely, about 2 hours.

Drizzle with Maple Glaze. Sprinkle with 2 tablespoons pecans. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Makes 1 loaf (20 slices).

Pecan Bread Recipe

3 cups flour
4 teaspoons baking powder
1 teaspoon salt
3/4 cup brown sugar
1 cup finely chopped pecans
1 egg
1 cup milk
1/2 cup water
2 tablespoons butter

Mix all ingredients. Grease loaf pan and pour bread batter into pan. Bake at 350 degrees for 50 to 60 minutes. Check center of bread for doneness.

Cinnamon-Pecan Monkey Bread

Monkey bread is a decadent concoction made from small balls of bread dough rolled in butter and a variety of ingredients. It is very rich, but really fun and easy to make. This version is rich with pecans, brown sugar, and cinnamon for a wonderful breakfast treat.

1 cup chopped pecans
1/3 cup brown sugar
1/3 cup sugar
1 tablespoon ground cinnamon
1 thawed loaf frozen bread dough
6 tablespoons melted butter

Sprinkle the pecans in the bottom of a greased tube pan and set aside. Combine the brown sugar, sugar, and cinnamon in a flat dish and set aside. Cut the bread dough into 24 even chunks. Dip each chunk of dough into the butter and then roll into the sugar mixture. Layer on top of the pecan mixture. Cover and let rise in a warm draft free location for one hour. Preheat the oven to 350 degrees. Bake for 30 minutes, or until golden brown. Remove from the pan and serve hot.

Makes 10 servings.

Preparation Time: 15 minutes
Rising Time: 1 hour
Baking Time: 30 minutes
Total Time: 1 hour, 45 minutes
