Got any veggies? Cut them up in bite size pieces saute in butter, garlic, S&P and Italian seasoning, boil your pasta. Add 1/2 C chicken broth to the veggies, reduce the broth down for a couple minutes, 1 Tbs cornstarch and 1 Tbs cold water, make a slurry, add to the broth and veggies, stir, stir, add pasta, stir and plate

Add some diced fresh tomatoes and grated parmesan. Or add some broccoli florets to the Alfredo sauce. Or chill the pasta and add feta cheese, kalamata olives, diced cucumbers, some pine nuts and Italian salad dressing for a Greek style salad.

A favorite recipe of mine:
1 (16 oz.) package bacon, chopped
1 med-lg onion, diced
3 tbs. minced garlic
olive oil
parmesean cheese
1 (28 oz.) can diced tomatoes
Crushed red pepper flakes
1 box rigatoni pasta
Cook pasta according to package directions and drain.
In a saucepan, heat just a touch of olive oil over medium heat. Add chopped bacon and cook until lightly starting to brown.
Add onion and cook until almost translucent. Add garlic and cook until bacon is crispy, onion is translucent, and garlic is lightly browned. Drain off some of the bacon grease (you want a little bit, but not much in the pan).
Add crushed red pepper flakes to your taste, and the can of tomatoes. Reduce heat and cook for about 15 minutes.
Mix in cooked pasta and top with grated parmesean cheese.
Enjoy!

Spinach and Ricotta Cheese Balls 10 oz thawed frozen spinach 1 1/2 cup grated parmesan 1 1/2 cup ricotta salt/whitle pepper 1 1/2 cup flour 2 eggs 2 egg yokes Combine all ingredients and refridgerate for 2 hours. Form 1 inch diameter cheese balls. Coat in flour and deep fry at 375 for 3 minutes.

Ingredients 4 persons
120gr tuna can
150 gr black olives pitted
parcely
10 cappers

1 glass of white wine

500 gr of pasta (penne or mezze maniche)
hot pepper
1 ciove of garlic
Cut olives and cappers into small parts
Put into a pan some oil (two tablespoons...more or less), the garlic, hot pepper and fry it. Then add tuna with some of its oil, olives, cappers, and wine, let it cook for a few minutes.
boil water with salt, then add pasta.
When pasta is cooked put it with a little bit of its water into the condiment and leave it on the fire for 1 minute.

Instead of sauce, roast some tomatoes & garlic, add to pasta w fresh chopped basil & fresh mozzarella cheese, s&p. I love pasta salads. You can add in just about anything you like -- roasted asparagus, sun dried tomatoes, roasted red peppers, feta or blue cheese, broc, toasted pine nuts, and dressing of choice -- Italian etc.
Noodle bowls are versatile - add shrimp, beef, pork, chicken, snow peas, green onions. Here are a few ideas:
Asian Chicken Noodle Bowl
Serving Size : 4
1 teaspoon sesame oil
1 tablespoon roasted garlic
1 pound chicken tenderloins
3 cups frozen Oriental stir-fry vegetables
1/4 cup lite teriyaki sauce
1 tablespoon Szechuan stir-fry sauce
5 ounces Chinese noodles
1. Fill saucepan 3/4 full of hot water, cover and place on high heat to boil for noodles.
2. Preheat wok on high for 2-3 minutes.
3. Add sesame oil and garlic to wok and swirl to coat.
4. Add chicken and cook for 3 minutes, turning occasionally.
5. Add vegetables, teriyaki sauce and stir-fry sauce; cook for 5 minutes.
6. Add noodles to water; boil for 3 minutes. Drain. Toss chicken with noodles and serve in a bowl.

Lemon Fettuccine With Smoked Salmon
2 tbl extra virgin olive oil
3 tsp minced fresh garlic
1/3 cup rehydrated, drained and julienned sun-dried tomatoes
Juice and zest of 2 small lemons, divided
1/4 cup cold butter cut into pieces
2 tbl chopped fresh Italian parsley
1 tbl chopped fresh oregano
1 (3-oz) pouch Smoked Salmon, flaked into bite-size pieces
1/2 pound fettuccine, cooked according to pkg
3 tbl toasted pine nuts
Grated Parmesan cheese
Chopped fresh basil
In large skillet, in hot oil, sauté garlic. Add tomatoes and lemon juice; sauté 1 minute longer. Add cold butter, lemon zest, parsley and oregano. Stir until butter has melted and mixture has thickened slightly; remove from heat. Gently fold in salmon. Pour salmon-lemon mixture over fettuccine; gently toss until coated. Sprinkle with pine nuts, Parmesan cheese and fresh basil. 2-4 servings

Saute some garlic and fresh herbs in butter. Toss with your cooked pasta and top with fresh grated parmesan. You can toss in chopped tomatoes, olives, peppers, mushrooms....anything you like.

I boil pasta and add diced zucchini for the last few minutes of boiling. Drain and return to the hot pot. Add parmesan cheese and butter mix to coat. Yummmmm!
Here are a few other recipes for you that I like to make:
Pasta with Asparagus and Peas
Recipe courtesy Kathleen Daelemans
1 pound penne rigate
1 bunch asparagus, cut into 2-inch pieces
2 cups fresh shelled peas
1 clove garlic, minced
1/4 cup loosely packed, freshly grated Parmesan
1 teaspoon olive oil
2 tablespoons fresh, chopped oregano
Salt and freshly ground black pepper
Place penne in a large pot of rapidly boiling, salted water. When pasta is about 2 minutes from being done, add the asparagus and peas and cook for 2 to 3 minutes or until the pasta and asparagus are cooked. Reserve 1 cup of cooking liquid. Drain pasta and return to the pot. Place the pot over low heat.
To the pasta and veggies, add only as much water as is necessary to create a nice "sauce". Cook for 1 minute, stirring constantly. Remove from the heat and add the garlic, cheese, olive oil, and oregano and toss to combine. Taste and season with salt and pepper. Serve immediately.

Macaroni and Cheddar Cheese
Recipe courtesy Rachael Ray
1 tablespoon vegetable or olive oil, 1 turn of the pan in a slow stream
2 tablespoons butter
3 tablespoons flour
1 1/2 cups whole or 2 percent milk
3 cups shredded white cheddar cheese
1/2 teaspoon nutmeg, ground or freshly grated
1/4 teaspoon ground cayenne pepper, a couple pinches
Salt
1 pound elbow macaroni, cooked 8 minutes or to al dente, with a little bite to it
Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the cheddar cheese on top.

Pasta with Creamy Pumpkin Sauce
1 pkg. (16 oz.) penne pasta, uncooked
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup (1 stick) butter or margarine
1/2 cup milk
1 cup canned pumpkin
1/2 tsp. ground red pepper
Ground nutmeg to taste
COOK pasta as directed on package.
MEANWHILE, place cream cheese, Parmesan cheese, butter and milk in large saucepan; cook on low heat until cream cheese is melted, stirring frequently. Add pumpkin and spices; cook until heated through, stirring occasionally.
ADD pasta; toss lightly. Serve topped with additional Parmesan cheese, if desired.

my favorite is a bit of bacon and chicken with a sliced onion and a couple of crushed garlic add cooking cream then when boiled add a chicken cube and there you go .
