I think Jews commerate a person's death by lighting a candle, but I am not sure if they do this. Do they simply light a candle and watch it burn?

es we do We light what is called a memorial candle on the anniversary of their passing Some like me light it on their birthdays and before Yom Kippur which is the day of atonement

I don't remember the details of the tradition, but theres a period immediately after the death where various things are done, and sometimes you light a specific variety of candle on the anniversary of their passing.
if you visit a synogogue, you may find in some areas, large panels of lights with metal things listing "in memory" of someone, and a light bulb next to it, sometimes these bulbs are lit for a month or whatever around the aniversary of their passing.
its somewhat up to the person really.
