they do in fact serve a purpose, those flaps alow them to put their ears down, like whne they are scared or being submisive. when the ear come down the flaps go out so the cartalige in the ear doesnt keep the ear up.

From all the cat books ive read, nobody really knows what it's for. Ive heard the theory that it is used kind of like a sattlelight to collect sound waves. Or it could just be left over from earlier evolutions(kinda like the spleen in the human body-no real use)

This is part of evolution. It's the same as us having ear lobes. They actually improve hearing by helping to focus the sound into the ear. It's the same for cats. They are close relatives of the snake and I presume that this is a remnant of their evolution from snakes. They hiss for exactly the same reason!
