Serves 4
8 cups baby spinach leaves
1/2 cup thinly sliced red onion
1 avocado, chopped
3/4 lb frozen fully cooked baby shrimp*, thawed
1/2 cup bottled Asian-style sesame salad dressing (choose a dairy-free, gluten-free version, if desired)
Place spinach in a salad serving bowl. Top the spinach with red onion and chopped avocado. Sprinkle the baby shrimp on top of the salad. Drizzle sesame dressing over the salad and toss to serve.

Get some Zatarain's Dirty Rice mix (near the Rice a Roni) and cook it according to directions. When it's done, toss in the shrimp and stir until done. You can also use a little cooked sausage, like kielbasa. Really good. Tastes homemade.

Ahi, Baby Shrimp and Hamachi Ceviche Recipe
Ingredients
4 ounces baby shrimp, peeled, deveined, diced
4 ounces ahi tuna, diced
4 ounces hamachi (amberjack), diced
3 sprigs mint leaves, coarsely chopped
6 sprigs cilantro leaves, finely chopped, divided use
1 or 2 Scotch bonnet chile, seeded
1/2 cup plus 3 Tbsp extra-virgin olive oil, divided use
6 limes, juiced
2 lemons, juiced
5 Tbsp sugar, divided use
3 tsp sea salt, divided use
1 whole coconut, cracked into 4 pieces
2 Tbsp lemon juice
1/4 cup fresh coconut milk
3 Tbsp dark rum
Papaya salad
Mint, for garnish
Instructions
Mix seafood with chopped mint, half the cilantro, chile, 3 Tablespoons olive oil, lime juice, juice of 2 lemons, 2 Tablespoons sugar and 1 teaspoon salt; allow to marinate 1 hour. Drain; refrigerate.
Place coconut pieces in heated 350-degree F oven 10 minutes or until tender.
Whisk together remaining sugar, salt, oil, cilantro, lemon juice, coconut milk and rum; toss with seafood. Place papaya salad on shell and top with ceviche; garnish with mint.
Yield: 4 servings

Shrimp And Potato Frittata
5 large shrimp - peeled and diced<
3 large eggs - well beaten
1/2 cup of frozen hash brown potatoes - thawed
1/3 cup of cheese - cheddar or American
1/4 cup of bell pepper - diced
1/4 cup of onions - diced
2 teaspoons butter
1 pinch of garlic powder
1 pinch of cayenne pepper
salt and pepper to taste
In a medium frying pan at medium heat, melt butter and add potatoes, peppers and onions. Cook until potatoes begin to brown. Add shrimp and continue to cook until they change to a nice brownis white color. Add beaten eggs and cheese andc stir. Cook until bottom of frittata is golden brown. Flip and cook the other side.

I use them in jambalaya. I just buy the boxed variety (like zatalans) and put in the shrimp, cut up smoked sausage, a can of corn and a can of tomatoes (w/ green chiles) and let it simmer about 45 min. It is a favorite of ours and adding the extra ingredients makes it lot more flavorful and abundant. If u don't like as much spice, use reg. diced tomatoes. You will love this as it is simple and inexpensive too yet tastes as good as the restaurant variety.

What I do is put it on some rice white,spanish or brown rice! after the rice is done i put the shrimp on top of rice while it cools off!! it will steam the shrimp a little.

Try it with tossing it with mushrooms, linguine and Alfredo sauce. Grilled chicken breast topped with asparagus, baby shrimp and mozza cheese. You could use hollendaise sauce on the chicken but the cheese is quick and easy.
