I m a vegetarian.I dont like garlic.I want to know how to prepare chana masala without garlic n easily available products.It must be yummy!

Chana Masala

Ingredients

chick peas - 2 cups
onions - 3
amchur - 1 tsp(or tamarind water 1 cup-thick)
garlic - 2 cloves, minced
tomato - 1
green chillies - 3
ginger - 1/2 inch, chopped
oil - 2 tsp.
chana masala/garam masala - 2 tsp.
mint(pudhina) leaves - 10 leaves

Procedure:

Soak chick peas overnight. Next day, boil in pressure cooker with a little salt upto 2-3 whistles.
Cut onions and tomatoes into rings. Keep some onion rings aside for garnishing.
Heat oil in a pan and sautee the onions in it. When it turns golden brown, add tomatoes, green chillies and ginger to it and mix well. Add the amchur powder/tamarind water, salt (acc. to your taste).
Add the chick peas to the above(use the water in which you boiled the chick peas, don't throw it. Let the gravy boil. Add chana masala and mix well. After 5 mins, the dish is done.
Garnish with onion rings and mint leaves.

It takes at most 30 minutes to prepare and goes great with puris or chapatis.

Chana Masala

Chick peas (kabuli chana) 1 cup
Onion 1
Tomato 1
Green chilli 1
Ginger an inch
Bay leaves 2-3
Red chilli powder 1 tsp.
Turmeric Powder 1/2 tsp.
Coriander powder 1 tsp.
Garam Masala Powder 1 tsp.
Tea 1 tsp.
Vegetable oil 3 tbsp.
Salt to taste
Coriander leaves for garnishing


Method:

1. Soak chick peas in water for overnight.

2. Take a small piece of white cloth. Place some tea leaves in the centre, gather the cloth and seal its mouth so that tea leaves don't fall out. Keep this in the pressure cooker along with chick peas. Pressure cook until tender. Tea adds brown color to the chick peas

3. Cut onion, tomato and green chilli. Grind it in mixie along with ginger and make paste.

4. Heat oil in a pan and fry bay leaves for 30 secs. Add the paste and fry on medium heat until golden brown (The oil starts separating from the mixture).

5. Add red chilli powder, turmeric powder, coriander powder, garam masala and salt. Mix well. Fry for 2-3 minutes.

6. Add water enough to make thick gravy. Bring the gravy to boil.

7. Add cooked chick peas (along with the water in which it was cooked, remove tea cloth). Stir well and cook over medium heat for 5-7 minutes.

Garnish with chopped green coriander leaves and serve hot.

Spiced Chickpeas In Sauce (Chana Masala)

Ingredients

1 1/2 c dried chickpeas
2 tsps canola oil
1 ts cumin seed
1 ts turmeric
pn asafetida<<<< 1 ts red pepper & salt
1 tb fresh ginger root; shredded
2 tsps fresh ginger root; shredded
1 green chile; minced
1 sm tomato; chopped
3 tbsps lemon or lime juice
2 tbsps cilantro

Instructions

Wash the chickpeas and soak overnight. Drain.

Heat oil in a nonstick saucepan. Add cumin, turmeric, asafetida, red pepper and salt. Stir until cumin seeds crackle. Add chickpeas and cover with water by 2". Add 1 T. ginger, chile, and tomato. Bring to a boil. Cover and simmer for 1 1/2-2 hours or until the chickpeas are tender.
Remove from the heat and sprinkle with lemon juice, remaining ginger and cilantro.
