And do you use cottage cheese?

Yes you can use cottage cheese but you have to drain the moisture out of it very well. Another cheese to use is farmers cheese which is similar to cottage cheese but comes in a solid chunk and is more dry. The dough is similar to a crepe, I dont exactly know how to make them although my mother made them all the time. She whipped up the batter to make the crepes and then dropped the batter into the pan. She then put a large spoonful of either the cheese in it or chunky style applesauce and continue to cook for a few minutes, Then she would fold the bottom and top and then the sides and turn the whole thing over. Both sides were golden. Then you would serve them with sour cream. Nalesnicki is the Polish word for Blintz or crepe I would guess. You can also make them with any kind of pie fillings, such as blueberry or cherry, even mashed potatoes or meat. But mainly they are used as either a side dish or a dessert. Hope this helped. Oh, well I just noticed that everyone is sending you the recipes. They got it right better than me, but you can use farmer's cheese and yes she did put a little sugar in it to sweeten it. I forgot about setting them aside.

batter
225 g flour
1 egg
3 eggs, separated
300 ml milk
300 ml water
1 tablespoon oil
1 pinch nutmeg
1 teaspoon salt
25 g butter (for greasing the pan)
cottage cheese filling
25 g butter
1 egg yolk
250 g cottage cheese
sugar (I would use about a tablespoon and a half.)
1 pinch vanilla sugar
milk

Batter: Sift the flour into a large bowl.
Add the egg and the egg yolks from the separated eggs.
Add the milk, water, oil and nutmeg and mix thoroughly.
Whisk the egg whites together with the salt until stiff, and fold into the batter.
Filling: Cream the butter with the egg yolk and mix together with the cheese.
Add the sugar and vanilla sugar.
Mix well.
If the mixture is too stiff, add a little bit of milk.
Putting It Together: Melt some of the butter over medium heat in a small frying pan.
When it's hot, pour in about 2tbs of batter and cook on both sides until lightly browned.
Remove from pan and keep warm in the oven at low heat.
Repeat until all of the batter is used.
Put a tablespoonful of filling on each pancake, fold over and serve hot.

Nalesniki (Polish Pancakes)

For Batter:
2 eggs
1 and 1/2 cup milk
3 Tablespoons water
1/2 cup sifted flour
2 pinches salt

For Cottage Cheese Filling:
2 cups small curd cottage cheese
2 egg yolks
2 Tablespoons rich cream
2 Tablespoons sugar
1 pinch of salt
1 drop of vanilla extract
Preheat oven to 250 degrees F.

Prepare The Crepe-like Pancakes:
Beat eggs until light (about a minute). Add milk and water and beat again a few times. Add remaining ingredients and scrape sides. Heat small frying pan. Add a tablespoon of butter and roll around covering the entire pan. Add about 3 tablespoons of batter rolling it around to make it even. Cook the bottom side only over moderate heat. Remove from pan and place on large platter until ready to fill. Repeat until mix is all gone.

Prepare The Filling:
Add eggs and sugar to the cottage cheese and mix well. Add remaining ingredients and stir until just mixed. Put two heaping tablespoons of filling into each pancake. Roll up jelly roll style (ends can be tucked in if desired). Place into a buttered pan (9" x 13") and cover with foil. Put pan in oven for about 30 minutes.

Serve topped with sour cream if desired.
