Chicken Cordon Bleu Casserole
Serving Size : 6

1 pound baby red potatoes, cut into 1-inch chunks
1 pound chicken-breast tenders
1 bag (12 ounces) broccoli florets
1 can (10 3/4 ounces) condensed cream of chicken soup
8 ounces cooked ham in 1 piece, cut into 1/2-inch chunks
1 cup shredded Swiss cheese
1/2 cup milk
2 tablespoons chopped fresh parsley leaves
1 garlic clove, finely chopped

Preheat oven to 350 degrees F.

Meanwhile, in microwave-safe large bowl, place potatoes and 2 tablespoons water. Cover bowl with waxed paper and microwave on High 3 to 4 minutes or until potatoes are fork-tender, stirring once.

Add chicken and all remaining ingredients to potatoes and toss to mix well. Transfer mixture to 13" by 9" glass or ceramic baking dish. Bake casserole, uncovered, 50 to 55 minutes or until chicken loses its pink color throughout and cheese begins to brown.

Drunk chicken. Season whole chicken with spices and butter, plug up the top hole with sausage or the neck, empty half a can of beer and insert in in the bottom end. Between the two legs and beer can it should stand up on a pan. Bake at 425 for bout 2 hours but keep checking.

the dish i make takes 5 ing.
1 pkg(app. 4 -5) chicken breasts or 4-5 pieces of chicken
1 pkg. onion soup mix
1 can cream of mushroom soup
3/4 of the soup can of rice
1&1/2 soup can water

preheat oven to 350 degrees

in bowl whisk together soup mix soup and water until blended. stir in rice.
put rice in a oven proof casserole dish (app.2.5 - 3 qt.)
top with chicken.
if the dish has a lid cover with it if not cover tightly with foil.
bake until rice is done.(since ovens vary this could be anywhere from 45 mins on up. if you need more liquid you can add a little chicken broth) check after the first 45 mins then every 15mins until chicken and rice are done

Here's one of my faves:

CHICKEN PARMESAN

4 skinless, boneless chicken breast halves
2 cans (14-1/2 oz. each) DEL MONTE® Diced Tomatoes with Basil, Garlic & Oregano
2 Tbsp. cornstarch
1/4 tsp. hot pepper sauce (optional)
1/3 cup grated Parmesan cheese

Preheat oven to 425°F. Slightly flatten each chicken breast; place in baking dish. Cover with foil.
Bake 20 minutes. Remove foil; drain.
Combine tomatoes, cornstarch and pepper sauce in saucepan; stir to dissolve cornstarch. Cook, stirring constantly, until thickened.
Pour sauce over chicken; top with cheese. Return to oven; bake, uncovered, 5 minutes or until chicken is done. Garnish with chopped parsley and serve with pasta, if desired.


Also--there is an EASY chicken cacciatore recipe on the label of one of the canned italian tomato brands.....It tastes like it's been a long days work, but it so easy!

Do either with a loaf of french bread, side salad, maybe some green beans and you are all set!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

cook skinless boneless chicken in frying pan. Pull it out and deglaze pan with white wine & chicken broth. Add some Wondra flour, capers and artichoke hearts. Cook down to a nice sauce add chicken back to coat, Serve over rice or noodles.

For a quickie meal my daughter & I take skinless boneless chicken breasts and season it to taste and pan fry it in a little butter and it's just delicious. Add a vegetable and your good to go. Quick and easy. Happy New Year.

Stir fry Brussels Sprouts Olive or peanut oil 1 clove garlic, minced 1 lb. Brussels Sprouts (all about the same size) 1 red bell pepper, cut into 1 inch by 1/2 inch strips 1/2 lb. mushrooms, sliced soy sauce water or broth toasted sesame seeds. In a deep wok or large skillet, heat oil. Saute garlic for 1 minutes. Add sprouts & bell pepper. Stir to combine, stir fry for 3 minutes. Add mushrooms and 1 teaspoon (or to taste) soy sauce and 1 tablespoon water or broth. Bring to a boil, cover and allow to steam for 4 to 5 minutes. Uncover, and serve with toasted sesame seeds.

in a small roaster add potatoes cut into wedges. Add chicken. Pour Italian dressing over all and bake at 350 until all is cooked. Tastes great and smells wonderful cooking. I also add carrots to the bottom layer of potatoes.
