Katelyn has a good answer, but not quite there on the answer.

Many of the fighters do use oils or gels that help them keep slippery during a fight to reduce the glove to skin contact or make it easier to slip out of a lock, but the refs just check to make sure they're not using it or trying to have a large amount packed behind their ears.

anything to help them get a win though, there's all kinds of ways to get around it, and that's why they check for it prior to the match

Vaseline is correct, but they also do the checking not just for foreign objects, but also so ensure that the fighter is not 'greased' so as to be extra slippery. This is a way of cheating that makes submissions hard to apply.

The refs check for vaseline and oils. fighters us it to reduce the friction of glove contact. its not aloud. just stupid UFC rules I guess.

At a guess... in the old days, boxers put vaseline on their faces so it would make the other fighter's gloves slip off once they got greasy.
