OLD FASHIONED HOMEMADE PRETZELS

1 pkg. dry yeast
1 1/2 c. lukewarm water
3/4 tsp. table salt
1/2 tsp. sugar
4 c. flour
1 egg, beaten
Coarse salt

Mix water and yeast in a large bowl. Let mixture set until you see tiny bubbles, then add the table salt and sugar. Stir in flour, 1 cup at a time.
Turn the dough onto a floured board and knead with your hands until it attains a soft, smooth consistency. Cut the dough into small pieces; roll each into a pencil shaped stick.

To form the pretzel shape, first make a "U" with the dough stick. Bring each tip of the "U" down and across to meet the opposite side. Press lightly where the tips overlap the base of the "U".

Place the pretzels on a foil lined cookie sheet lightly dusted with flour. Brush each with well beaten egg and sprinkle with coarse salt. Bake at 400 degrees for 15 minutes. Let cool, then enjoy!!

Home made Pretzel~

Mix 1 package of yeast with 1 1/2 cups warm water
Stir in 1 teaspoon salt and 1 tablespoon sugar and an egg.
Stir in 2 cups flour.
Add 2 more cups flour and knead it in on a floured surface.
Shape and bake at 425 degrees for 12-15 minutes.
Brush with melted butter and sprinkle salt.

QUICK HOMEMADE SOFT PRETZELS WITH
CHEESY SAUCE

1 cake yeast
1 tsp. salt
4 c. flour
2 tbsp. coarse salt (to sprinkle on before baking)
1 1/2 c. warm water
1 tbsp. sugar
1 lg. egg, beaten

Dissolve yeast in warm water, add salt and sugar, blend in flour and knead dough until smooth.

Cut dough into small pieces and roll into ropes, twist into pretzel shapes and place on baking sheet.

Brush pretzels with beaten egg and sprinkle with coarse salt. Bake immediately in 425 degree oven for 12 to 15 minutes or until brown.

CHEESY SAUCE:

Prepare a white sauce with 2 tablespoons butter, 3 tablespoons flour, and 1 cup milk. Melt butter over low heat, blend in flour and cook over medium heat until bubbly.

Stir in 1 cup milk slowly, stirring constantly until the sauce thickens and starts to boil.

Continue cooking 1 minute to eliminate the pasty flavor of uncooked flour. Stir 1 1/2 cups grated or cubed cheese in a little at a time until melted and thoroughly mixed with the sauce. (Use sharp or mild cheddar cheese.) Do not allow the sauce to boil while adding the cheese as the cheese could become stringy.

Remove from heat.

OPTION: A tiny pinch of ground red pepper or 1/2 teaspoon prepared mustard stirred into the white sauce before adding the cheese perks up the flavor. This sauce makes a great macaroni and cheese dish by simply stirring in the cooked macaroni and serve immediately or bake the macaroni and cheese mixture at 350 degrees for 20 minutes for a slightly different texture. When pretzels are ready to serve, just dip them into the warm cheese sauce.

HINT: For a less cheesy sauce, use only 1 cup cheese and in the sauce use only 2 tablespoons butter and 2 tablespoons flour to 1 cup milk. Sauce can be prepared ahead and just barely warmed when ready to use.

NOTE: These are good served hot and plain, too.

Soft Pretzel Recipe
For 3 dozen 6-inch sticks or

For 1 dozen 6-inch Pretzels

1 tbsp Yeast
1 tbsp Sugar
1 tsp Salt
2 tbsp softened butter or softened margarine
1 cup warm (115-+ deg F) water

2 3/4 cups flour

Coarse Salt to sprinkle on Pretzels before baking
5 tsp baking soda mixed in 4 cups water in a non-aluminum saucepan.
1 large slotted spoon to "go fishing"
Greased cookie sheet
Preheat oven to 475 F

Put yeast, sugar, salt, butter/marg, water and ONE CUP of the flour into a medium mixing bowl and pour in the water.

Stir till all smooth, and yeast starts to bubble.

At this point add the rest of the flour, stir till it is mixed in.
When mixture is too stiff to stir with a spoon, begin kneading.
Knead dough till smooth and till it no longer sticks to the bowl and your hands

Allow dough to rise to about double its height.

While dough is rising, grease the cookie sheet. and prepare the baking soda-water mixture and bring to a boil on stove.

When dough is risen enough, punch down, knead for a minute or so, then divide and roll the 6-inch sticks with your hands, to about 1/2 inch in diameter, or 12-15-inch long rolls to make into the pretzel shape.

Allow sticks or pretzels to sit for about 1-2 mins. Place them into boiling water-baking soda mixture one or two at a time.

Let the pretzels boil for 1 minute 10 seconds, then flip them over with the slotted spoon and boil on the other side for 1 minute and 10 seconds.

This boiling step gives them a firm skin and adds some flavour. Not boiling long enough leaves them too soft and allows them to rise too much. Boiling too long makes them tough.

Fish them out of the water, let them drip off and place them on the greased cookie sheet.

When all the pretzels or sticks are done, sprinkle the coarse salt on them.Or cinnamon and sugar

Bake for 12-15 minutes or till sticks or pretzels are golden brown.

You can double the recipe in proportion.
