It depends on the brand, but most likely it's xanthan gum or guar gum. Starch thickeners, like corn-starch, generally only thicken things when heat is applied (which it is not in instant pudding). Some brands will use gelatin, or some combination of gelatin and a gum of some kind.

no starch product..that kills the good taste in ur pudding. subtract 1/4 or 1/2 cup of milk with te powder pudding.

They usually use tapioca powder. You would probably need to use cornstarch as not many places would sell tapioca powder. Both act and work about exactly the same so you could not tell any difference.
