Free Masons is most definitely a religon and in fact the Mormon church is organized with the Masonic organizations and borrows allot of the terms
The Masons do not freely talk about their beliefs and are not allowed to in a way... so it is no surprise that even the lower level Masons dont know as they are not initially told..

You are probably referring to the "all seeing eye" in the stained glass at the front of the chapel in the UN building. The symbol of the all seeing eye, or the eye of God, is older than Freemasonry. Although Freemasons have adopted it as a symbol for the eye of God, it is also a prominent Christian symbol (most likely the reason for its being present in the chapel). It is also known as the "Eye of Providence" (as seen on the one dollar bill) and the "Eye of Horus" (as seen in ancient Egypt).
Symbols mean different things to different people. Don't assume that because Masons use an eye as a symbol, that everywhere you see an eye means it has to do with the Masons. Take the letter X for example. It can mean a kiss on a letter, a railroad crossing, an alphabetical letter, an algabraeic variable, or even a location, as in X marks the spot. When you see an X at a railroad crossing, you don't assume it means a kiss, do you?
There is no doubt in my mind that the eye seen in the chapel at the UN is not associated with Freemasonry. I hope you can see why from my explanation.

Masonry (also called Freemasonry) is not a religion.
What "symbol" are you making reference to?
It's always curious how people will take the time and effort to read utter hogwash about a certain topic...yet completely avoid anything near the truth. Masonry is NOT a religion. EVERY mason will tell you that. EVERY credible website and text will tell you that.
PS: I'm one of those "low level" 32nd degree masons.

Did you ever wonder why the bible says that Jesus was a carpenter since the area that he lived in didn't have much wood, and still doesn't to this day. If you do the research you will find out that Jesus was a mason, not a carpenter.

They have religious undertones, but aren't actually a religion themselves.
Do you have a picture of the symbol you claim? I just looked for it and if it were true (and it really wouldn't surprise me) I would expect it to be easy to find. I only saw a couple of references to it in other forums like this so I suspect it is a myth.

many of our founding fathers were masons. i wonder if that has anything to do with it. i know, the un didn't exist then. its just a shot in the dark
