I'm looking for an oatmeal cookie recipe that uses oil in place of butter or shortening. Does anyone have that recipe or the website to get one using oil only for the fat.

You could just substitute oil for the butter or shortening. Usually 1/3 to 1/2 cup of oil is the standard measurement in cookies and cakes. If you use the oil, I would use a little more vanilla extract for flavor. Maple syrup or honey is also good for flavoring oatmeal cookies.

This is the recipe for Vanishing Oatmeal Cookies which my mom always made. I think (almost certain) it originally came from the lid of the Quaker Oatmeal canister. Like everything else...it ends up on the Net some way or another. lol Good luck.
