Look up a recipe for "Basic white sauce". Keep your sauce to the side while you thinly slice about 6 potatoes and 1/2 large onion. Layer the potatoes with the sauce, onions, and a sprinkle of salt and pepper in between. If you want to jazz these up and make them au gratin (with cheddar cheese)...when your white sauce is done add a small bag of shredded cheddar and stir till fully melted and incorporated.
Pop ur casserole in the oven for the usual 350 for about 45 minutes or until the potatoes are fork tender.

Scalloped Potatoes
INGREDIENTS
5 potatoes, peeled and sliced
1 (8 ounce) package Cheddar cheese, cubed
1/2 cup butter
1 cup milk
2 teaspoons cooking sherry
1 cup cornflakes cereal crumbs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and place in a 2 quart casserole dish.
In a microwave safe dish combine cheese, butter and milk. Microwave until cheese and butter melt; stir in the sherry. Pour cheese mixture over potatoes and sprinkle cornflakes crumbs on top.
Bake in preheated oven for 15 to 30 minutes, or until heated through.

Ingredients
(8 servings)
6 c Potatos, raw, sliced thin
3 tb Butter
3 tb Flour
1 1/2 c Milk
1 ts Salt
1 x Cayenne
1 c Velveeta, grated
3/4 c Gn pepper/pimento mix grated
Instructions
For sauce:
In a saucepan, melt butter, then blend in flour. Cook over moderate heat and slowly stir in milk. Season with salt & cayenne. Continue cooking until sauce is smooth and boiling. Reduce heat and add cheese, stirring, until cheese is blended. Add green pepper/pimento mixture, stir, and remove from heat. Grease a baking dish and fill with alternate layers of potatoes and sauce. Bake in moderate oven, 350 degrees, until potatos are done, about 1-1/2 to 2 hours. Potatoes may be turned with a spoon to ensure even cooking.

Preheat oven to 375 F. In 2-quart saucepan over medium heat, in hot butter, cook onion until tender, about 5 minutes. Stir in flour and salt until blended; cook 1 minute. Gradually stir in milk and cook, stirring constantly, until mixture thickens slightly. Remove saucepan from hear; stir in 1/4 cup shredded cheese. In shallow 2-quart casserole, arrange half of the potato slices; pour half of the sauce on top; sprinkle with half of remaining cheese; repeat. Sprinkle with paprika. Bake, covered 45 minutes. Uncover and bake 15 minutes longer or until potatoes are tender. Makes 6 accompaniment servings.

These are different and so good!
Peel potatoes and slice thin(4-6 potatoes)
Put them in a large dish.sprinkle with salt, pepper, garlic powder,rosemary.
Pour 1 can chicken broth and 1/2 cup of water
(you can add another can of broth with more potatoes.)
mix in 1 1/2 cups of monneray jack cheese.1/2 cup chopped onion.,
sprinkle with more pepper and 1/2 cup cheese.
Cover with foil and bake at 350 until thickened and potatoes are tender.
sorry I cook by eye, but measurements are easy, just cook as many potatoes as you need, and add broth to cover.
This is savory and yummy.

party potatoes
1 large bag of hashbrown potatoes
8 cups cheddar cheese
1- 16 oz container sour cream
2 cans cream of mushroom soup
1 cup crushed cornflakes, honey nut ones work well
1 stick of melted butter
mix first 4 ingredients, place in greased baking ban, mix butter with cornflakes and place on top of potatoe mixture. Bake at 375 for about 1 hour or until bubbly and golden brown on top. This reciped is delicious!!
