Yes you can, I hardly ever thaw my roasts out before cooking. Of course I usually cook mine on 250 or 300 degrees for 5 or 6 hours. They turn out so nice~juicy & super tender!

Find a better way to thaw it out fast, put it in the microwave, keeping meat out like that (even though its in the fridge especially raw) is you basically asking for salmonella or some type of food poisoning, if you leave it out for another day your asking for some nasty *** bacteria girl!!! Thaw it out in the microwave and cook it now.

put it in the sink with a bag that seal really good around it. fill up the sink with cold water. keep changing the water every 30 mins until its defrosted. dont use hot water it just slowly cooks the meat and brings it to an unsafe temp

of course you can cook it.......
i don't know if you are making a pot roast or a beef roast to bake........
but it won't kmake a difference.......
always defrost in cold water.....not the microwave, as it toughens the meat.......
but go ahead and cook it....and enjoy
