DIRECTIONS
Grind almonds in a blender. Thoroughly mix in confectioners sugar. Beat egg whites slightly, then stir into the almond mixture. Add almond extract, using your hands to blend the heavy mixture.

Almond paste is a combination of ground bitter almonds, confectioner's sugar and lightly beaten egg whites, and a little almond extract kneaded together into a smooth paste. Bitter almonds are a bit hard to find, so I use regular almonds that I blanche, shuck the skins, toast and then grind in my food processor. I recently saw that Trader Joe's sells an almond flour that would work well instead. Lots of recipes on the web for it. Very easy to make.

1 lb almond flour
1 lb confectioner's sugar
2 egg whites, lightly beaten
1/2 tsp almond extract

Knead ingredients together until a smooth paste is formed. That's it. Marzipan is made from almond paste combined with more sugar, corn syrup, and cornstarch and then kneaded together.

ALMOND PASTE

1 1/2 cups whole blanched almonds
1 2/3 cups confectioners sugar
1/4 cup egg whites

In a food processor, grind the almonds into a fine powder, approximately 2 minutes. Add the confectioners sugar and blend well. Transfer the mixture to a large bowl and with a wooden spoon blend in the egg whites until smooth.

On a flat surface lightly dusted with confectioners sugar, roll out the almond paste into a 14" long x 1" round log. Wrap in parchment paper and refrigerate for 1 hour.

When rested, cut the log in two. On a smooth clean surface, roll out each piece to double its length, approximately 20 inches. Flatten each roll with your fingertips. Using a knife or a metal spatula, score the tops of the logs with crisscross marks. Coil each log and place on a serving plate.

Refrigerate until ready to serve. You can store in a closed container in the refrigerator for one week.

Makes approximately 1 pound.

I've seen almond paste made on tv (probably Martha Stewart), but it did look like a lot of trouble. If I were you, I just buy it.

Almond Paste. I just buy it. You can get it in the baked good section of a good grocery store. Then you use it in the pastry, for example inside a puff pastry.

Watch thsoe raw egg whites, just buy almond paste, it will have preservative and will keep longer than i f you made it at home.

It's easier just to buy it at the grocery store. Look for it in the dairy section by the butter or cheeses.

You can buy almond paste ...it is also known as marzipan.

I agree with the people here who say to buy it...it is simply delicious and unless you love love love to cook, it is just as easy to buy it.
