could you just substitute orange juice for lemon juice in a lemon merangue recipe?

Sure. Just substitute fresh orange juice for lemon juice in a lemon meringue pie recipe. Lime is good, too.

Actually, you typically can't substitute orange and lemon juices for each other. Lemon juice has higher acid content and will thicken curds more effectively than lower acid orange juice. You can make an orange merengue pie, just use an orange curd recipe for the filling. You might find that it's a little overly sweet though.

Here's a recipe for the filling, otherwise follow the lemon merengue recipe

ingredients
3 large eggs
2 large egg yolks
1/2 cup sugar
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
2 teaspoons finely grated orange zest
2 teaspoons finely grated lemon zest
1 stick (4 ounces) cold unsalted butter, cut into tablespoons

In a small heavy saucepan, whisk together the eggs and egg yolks. Whisk in the sugar, then whisk in the citrus juices and zests. Add the butter and whisk constantly over moderately low heat until the mixture thickens, about 8 minutes; do not let it boil. Immediately strain the curd into a bowl. Press plastic wrap directly on the surface of the curd and cut 6 small steam vents in the plastic. Refrigerate the curd overnight; it can be refrigerated for up to 1 week.

There is such thing as orange meringue pie....here is the recipe!!!!



INGREDIENTS
1 prepared 8 inch pastry shell, baked and cooled
3 1/2 tablespoons cornstarch
3/4 cup white sugar
1 pinch salt
1 1/4 cups boiling water
2 tablespoons butter
2 egg yolks, beaten
6 tablespoons frozen orange juice concentrate, thawed
4 teaspoons orange zest
2 egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
4 tablespoons white sugar



DIRECTIONS
Blend cornstarch, 3/4 cup sugar, and salt in a saucepan. Gradually stir in the hot water. Cook over medium heat, stirring constantly until thickened. Reduce heat to low. Cook and stir 5 minutes longer. Remove from heat.
Mix butter or margarine, egg yolks, orange juice, and orange rind into the cornstarch mixture. Cook one minute more. Cover entire surface with clear plastic. Let cool just slightly, and pour into the cooled pastry shell. Cool to room temperature.
In a clean glass bowl, beat the egg whites with vanilla extract and cream of tartar until foamy. Beat in 4 tablespoons sugar gradually, and continue beating until meringue forms stiff and glossy peaks. Spread meringue in swirls over the filling; be sure to seal to the edge of the pastry.
Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or till the meringue is tipped golden brown. Cool to room temperature.

You need one 9" baked pie shell.

Filling:
1 cup sugar
3 Tb. cornstarch
1/2 cup water
1 cup orange juice (fresh or not from concentrate)
3 egg yolks, slightly beaten
3 Tb. butter
1 Tb. lemon juice
1 Tb. grated orange rind

Preparation:
1. In a saucepan, mix sugar and cornstarch. Gradually stir in water and orange juice.
2. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute.
3. Slowly stir half the hot mixture into the egg yolks (in another container).
4. Beat the egg mixture into the saucepan mixture. Boil 1 minute longer, stirring constantly.
5. Remove from heat. Continue stirring until smooth.
6. Blend in butter, lemon juice, and orange rind.
7. Pour into baked pie shell. Cover with meringue. Bake at 400F for 8-10 minutes, or until meringue is a delicate brown.

why not? if u make your own that is, i dont think ive seen it for sale on the shelves.

You could probably use any of the citrus fruits, it would be a nice alternative i think, i really like lemon merangue pie though

yes a good recipe for this on back of eagle brand condensed milk
follow the directions for lemon but use orange

yes, substitute orange juice for lemon juice and lessen the sugar ( so it wldn't be soo sweet)
