Saucey
Our focus this week is on vegetabes and sauces, and in lag this week we are making a bunch of different sauces from the 5 Mother Sauce groups. Sauces are broken down into 5 different Leading (Mother) Sauces, and almost every sauce is created using these as a base. The following is a list of the 5 Mother Sauces and their main liquid and thickening agent.
Espagnole (Brown) Sauce - Brown Stock, Brown Roux
Bechamel Sauce - Milk, White Roux
Veloute Sauce - White Stock, Blonde Roux
Hollandaise Sauce - Butter, Egg Yolks (emulsion)
Marinara Sauce - Tomato vegetables and herbs
Theses are the classical preparations for the Mother Sauces, but modern interpretations tend to stay away from using roux (equal parts fat and flour by weight) as a thickening agent, and turning towards natural reductions and alternative thickening agents.

The terms Marinara sauce and Neapolitan sauce are used in the United States to refer to a quickly-made plain tomato-based sauce without meat or seafood, that may be poured over pasta or used as a dipping sauce. This sauce is known as Napolitana sauce in Italy and other nations.
The term Marinara, from Italian alla marinara 'sailor style', is used in nations such as Italy and Australia to refer to a dish containing seafood.

It's spicier than a normal tomato sauce, and usually is made with anchovies. Great for dipping sauce, but also good over pasta.
