If you're bothered by gas when you eat beans, try this simple cure for your problem. Put the beans in a large pot and cover them with water. Bring them to a boil and take them off the heat. This breaks the capsules surrounding the beans and allows stachyose, verbascose and raffinose, the gas-causing sugars, to escape into the water. Stir a teaspoon or so of baking soda into the water (to make it more alkaline) and let the beans soak overnight. Drain the soaking water off the beans and rinse them several times. (If you eat the soaking liquid, you will cause unbelievable discomfort for yourself and those around you). Then proceed with your recipe to cook the beans.

Nothing will remove all the gaseous elements as that is the nature of fibrous foods but you can reduce the effects with this technique: soak beans in cold water with 2 tablespoons baking powder for 6-8 hours then rinse well under cold running water - cover with at least 3 inches of water above the beans salt and flavor as desired add 1/2 cup cooking oil cover and slow cook to proper consistency. This will make perfect "gas less" beans.

Double or triple soak. Rinse good before putting beans into new soak. I start 2 days in advance and soak during night, rinse & put in new water for several hours. The key is in rinsing the frothty stuff off of them (that causes the gas :} ).

I've also had good luck w/ the quick soak method: put them in pot covered w/ couple inches of water and turn up the heat. let them boil for an hour or so then turn off heat and soak. Rinse next am & put in soak water.

I know this sounds like a lot of trouble to go to but it's worth it in the long run.
I've tried cola in my beans...didn't work.
I've tried fennel seed in my beans...didn't work as well as double or triple soak w/ good rinses.

Yes we can cooked with out salt but there is no taste in the this food

Can you put that Beano stuff in prior to cooking? That's the only thing I'd know of.
