My husband has always known where I stand religiously. But, my question for you is, what does it matter? My husband is christian, I am Agnostic, and we get along fine. Not once have we had an argument concerning religion. The key is to respect each others beliefs. You ask this question as if Atheism is a disease that must be treated, and could be contagious. It is no more a disease than Christianity, or any other belief system.

I think it would probably be helpful to know before the wedding... you know, life for planning what kind of ceremony it would be.
I wouldn't force it into conversation because that could bring up issues in and of itself. I'd imagine that it would come out soon enough though.
