I am not sure if I have this right. This is my version of their recipe. Its pretty tasty.
Ingredients:
1 pound U.S. Farm-Raised Catfish fillets
1 tablespoon olive oil
2 tablespoons lime juice
1/2 cup Chardonnay wine
1 tablespoon dry mustard
1 tablespoon chili powder
1 teaspoon pepper
1/4 cup fresh cilantro, chopped
1/4 teaspoon salt (optional)
1 tablespoon melted butter
1 teaspoon chopped parsley
Directions:
Mix first eight ingredients in a medium bowl. Add Catfish to bowl; marinate for 15 minutes. Drain fillets; place on a lightly oiled grill 4 inches above hot coals. Grill about 5 minutes per side or until fish flakes when tested with a fork. Baste with marinade while cooking. Makes 4 servings.

I don't know how cracker barrell does it, but since cracker barrel is southern cooking, try this: mix 1c. corn meal mix to 1/2c. flour, add salt and pepper and some parsley. dredge raw fillets in this mix and fry in oil on both sides until done. I actually got this recipe from a southerner and tried it last week. it was really good. better than I thought it would be. you can get corn meal mix in the bread crumb aisle at the food store.

Prevent dehydration by drinking fluids frequently, even if you don't feel particularly thirsty. Plan on drinking one eight ounce bottle of water or more per hour of exercise, and include several ounces of juice or sports drink. If you're not exercising, try to drink about 8 glasses of water, tea, or other fluids in a 24-hour period. Eat hydrating foods, such as fresh fruits and vegetables. Remember to drink extra water if you are eating dry or salty foods. :) :)

I worked at Cracker Barrel for five years. That is some good fish.
We just used a little butter, Old Bay seasoning, and a touch of cayenne pepper.
Mix the cayenne with the Old Bay, sprinkle it on the fish, and grill it on a flat grill or a nonstick pan in a little butter.

you must drink 64 oz. of water per day. that will completely solve any dehydration issues. eat more. sounds like an eating disorder. if you value your kidneys, and wish to avoid lifetime dialysis; drink water.
