Paper Salmon
INGREDIENTS
2 (5 ounce) salmon fillets or steaks
2 tablespoons frozen green peas
2 cloves garlic, crushed
2 dashes lemon juice
1 tablespoon olive oil
DIRECTIONS
Preheat the oven to 425 degrees F (220 degrees C).
Place each piece of salmon on a large (12 inch) circle of parchment paper so that they are 1 inch from the center. Cover each with a spoonful of peas, a clove of crushed garlic, a squeeze of lemon juice and a drizzle of olive oil. Fold the paper over into a packet and seal the edges by crimping and folding like a pasty. Place on a baking sheet.
Bake for 15 minutes in the preheated oven, or until fish is able to flake with a fork. To serve, place the packets onto serving plates and cut open the center in the shape of a cross.
Serve with steamed broccoli and buttered new potatoes or rice pilaf.

Do a low fat or fat free mayo...add grainy mustard and chopped fresh or dried tarragon. You could really switch up the tarragon for any herb if you do not have it. A squeeze from a 1/2 an orange would be a tasty combo with this as well and will do double duty since it will help the sauce to thin out a bit. The only thing that could improve this non-cooked sauce is a smidgen of salt and pepper. As implied this sauce can be poured over your salmon after you have cooked it. Possibilities are endless there...you could saute, bake, grill, poach.
As far as sides go...I would keep it simple and go with cous-cous or a buttered noodle. Broccoli is my favorite green veggie so I would probably add that as well. Good luck!

Season the salmon with your favorite herbs and salt. Brush with olive oil or melted butter. Wrap in a foil packet and bake in the oven at 350 until it is flaky. The amount of time depends on how big the salmon is. You can open the foil at the very end of cooking and turn the broiler on to make a slight crust on the top.
A good side dish is mixed, steamed veggies.

Baked Salmon
1 x 3 lb whole salmon, (3 to 4)
2 tbl Butter
4 slc Lemon
Salt and pepper to taste
Lay salmon on sheet of tinfoil, shiny side up.
If needed, crimp 2 sheets together.
Dot salmon with butter, put butter, lemons, salt and pepper inside body.
(With steaks or pieces, lay lemon slices on top, salt and pepper to taste.)
Fold foil tightly over contents, crimp ends to make airtight seal.
Place in shallow metal pan or ovenproof dish.
Add boiling water to cover bottom of pan, place in oven at 450 F
(230 C).
When fish cooking time is up, open foil to check doneness.
For larger fish, check by pressing fork into flesh near backbone.
If flesh flakes and falls away, it's done; if not, cook a little longer.
Place on plate, garnish with paprika, sprigs of parsley, fresh lemon slices.
NOTES : This is a delicious moist way to cook salmon and the finished dish is rather better cold than hot, ideal for a summer meal. I like to add tarragon or fennel as seasoning. The recipe can be used for any seafish such as snapper or hallbut and enhances the more delicate flavours of white fish. Thin fish like sole or plaice will take 5 minutes, thicker fish will take 12-15 minutes, a whole 3-4 lb salmon or similar-sized fish will take about 30 minutes.
Good sides for salmon are any fresh veggie steamed, especiaslly asparagus or broccoli.

I bake it in the oven with some basil on top or some italian dressing. I get some rigatoni or penne pasta and the orange tomato pesto that you could buy in a jar (I think it's Ronzoni and they have it near the green basil pesto). Don't cook the pesto. Put about a tablespoon or a little more on a bowl of pasta, sprinkle some pine nuts on it, then put the salmon on top.
Or cook the salmon the same way and place it on a Caesar salad.

rub salmon w/olive oil, season w/garlic salt & pepper. squeeze some lemon juice. Bake 350 for 10-15 minutes. Serve w/steamed veggies that are seasoned w/fresh garlic & fresh ground pepper and couscous made w/chicken stock instead of water. after cooking toss in some chopped red & green pepper and chopped onion. season to taste

Ewww, no BBQ? That is a great way.
OK, try to roll fillets in a batter or dry pancake flour and fry it in a bit of oil in pan. Can bake the same way.
Add lemon pepper and onions and bake.
Deep fry it for good stuff.

Awesome, salmons my favorite, just bake it at 350 for 15 mins with some salt pepper and a little nori (seaweed)
Brown rice or somen noodle, steam broccoli, squash, or cabbage.
