What is the proof in alcohol? I know it is like double the alcohol content but what actully is it?

The short answer is, an older way of measuring ethanol content. The more complicated history is nicely written up in Wikipedia.

Alcoholic proof is a measure of how much ethanol is in an alcoholic beverage, and is approximately twice the percentage of alcohol by volume. In other words if a bottle of Vodka is 40 percent alcohol per liter, then it is 80 proof.

It is double the percentage of alcohol. If it's seventy proof that means that it is really 35% alcohol.
