POMEGRANATE-GINGER CHAMPAGNE COCKTAIL
1 cup pomegranate juice
1 tablespoon sugar
1 1/4-inch-thick slice fresh ginger
4 tablespoons fresh orange juice
1 teaspoon Cointreau or other orange liqueur
1 750-ml bottle brut Champagne, well chilled
Boil first 3 ingredients in heavy small saucepan until syrup is reduced to 1/3 cup, stirring often, about 10 minutes. Cool.
Pour 4 teaspoons pomegranate syrup, 1 tablespoon orange juice, and 1/4 teaspoon Cointreau into each of four 6-ounce Champagne flutes. Fill each with 2/3 cup Champagne.

Mimosa is my favorite. OJ and champagne. Variations:
INGREDIENTS:
1/2 oz triple sec
1 1/2 oz fresh orange juice
3 1/2 oz chilled Champagne
orange slice for garnish
PREPARATION:
Build in the order given in a champagne flute.
You can vary this recipe by adding a splash of grenadine, adding a little Cognac or substituting Grand Mariner for the triple sec.
Garnish with the orange

well I have 2 favourites!!
1) A Mashtini
1/2oz strawberry vodka
1/4oz strawberry liquor
1/2oz fresh strawberry puree
pour into a cocktail/martini glass and layer the champagne on top
2) Oriental Garden
1/2oz vodka
1/2oz lychee puree or juice
1/4oz elderflower cordial
serve in a flute or cocktail/martini glass and top with champagne.

I love Mimosas, espcially good hangover cures and perfect brekfast drinks... Mind you, I love champagne as it is the best!
