Have usually made it with very ripe bananas. Should I wait a few days?

Sure, use them.If you want them to get brown quickly-mash them, and cover overnight.Use they next day,and you'll be fine.

You can make it with ripe bananas but your bread won't be as brown as it is with very ripe bananas. I would wait a few days. I also freeze bananas in their skins throughout the year. Then when I get to use them, I just let them thaw, and cut the end of the rind and squeeze out the banana. No fuss, No muss! Good luck!!

You can make banana bread with any stage banana, but the riper it is, the healthier the banana.

Better to wait but it will work today if you smash the banana up well.
