Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro

Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.

If you're of drinking age, bring a cold bottle of Chablis, in a small basket or wine bag and wrapped in a towel with a cheap simple cork screw (any brand Chablis over $4 is decent enough). Light white wines like Chablis go great with fish because they're fruity and won't over-power the light tastes of the fish, and the gesture will impress him. If you're not of drinking age, bring him cheesecake (Real stuff, not Sarah Lee). Guy cooks always like cheesecake.

I'm not sure what area of the country you are in, but cheese grits go great with fish. In the south, they are commonly on menus with seafood. If you have access to Quaker 5 minute grits, there is a recipe for cheese grits on the package. They are really good.

If you are not in the south, or don't like grits, try taking a cheesy hashbrown casserole. Enjoy your dinner.

Awesomely Easy Sesame Asparagus -

INGREDIENTS
1 bunch fresh asparagus, trimmed
1 tablespoon olive oil
2 tablespoons black sesame seeds, lightly toasted
kosher salt to taste

DIRECTIONS
Fill a large saucepan with 1/2 inch of water and bring to a boil. Cook asparagus until tender-crisp, about 5 minutes. Drain, then rinse with cold water. Return pan to the stove over medium heat, pour in oil, and swirl around pan. Shake excess water off of the asparagus, and toss in oil with sesame seeds, and salt to reheat.
Tip

To toast sesame seeds, toss them in a heavy bottomed skillet over medium heat until they are fragrant.

I hope this is some help to you. You could always go with a nice bottle of Red Wine. That's always a nice surprise!!

Bring a great vegetarian entree and let him know he does not have to kill fish to feel good about his meal. I think Dee has a wonderful idea! If that doesnt wow him, nothing will. The only problem is, is it ok to have desert before the meal?
