Well, if you want a good old fashioned greasy cheeseburger try this:
Make 1/3 to 1/2 pound patties of lean ground chuck. (Mixing gr. chuck with gr. sirloin adds a yummy flavor!)
Slice an onion thinly and begin frying it in a large pan with butter before you add the meat patties. Cook them about halfway, then add the burgers to the hot pan. Seaon with garlic powder, seasoned salt and black pepper. Turn burgers after 4-5 minutes and season the other side. Cook another 4-5 minutes, turn off the heat and cover the pan. Let burgers rest for another 5 minutes covered. This will cook them to about medium well. Top with pepper jack cheese (or your favorite cheese) and the fried onions and serve on toasted kaiser rolls. YUM! Enjoy and Happy New Year!

Fat makes Burgers excellent! Buy the cheaper Hamburger Meat it stick together well. I make my Patties about a 1/2 inch thick. Big flat and larger than the Bun. The cheaper meat have more fat and will shrink. You can fry in a pan or cook on the Grill. Add Cheese about one minute before they done and it not all run off from melting. In a pan cover with a lid to melt cheese, on grill close the lid. Burgers take time to be well done. Figure at least 5 minutes each side in a pan and depending on the Grill heat I cook about 7 minutes each side on a grill.
You can spice things up depending what you like. We have mixed BBQ Sauce into the meat and Cooked. Mixed Onion Soup mix (Dry) into the meat. Worcestershire Sauce. OR, just salt and pepper.

The Perfect Cheeseburger
Ingredients:
Boca Burger
Freshly ground pepper
1/2 teaspoon garlic salt
Canola cooking spray
4 slices reduced-fat cheese
4 whole-wheat hamburger buns
Lettuce leaves (optional)
Tomato and onion slices (optional)
Mustard and ketchup (optional)
Barbecue sauce (optional)
Preparation:
1. Divide the Boca burger into 4 equal portions. Use a patty press (or your hands) to make four burgers. Sprinkle them with the pepper and garlic salt.
2. Pan-fry, broil, or grill the burgers, using canola cooking spray to keep them from sticking to the pan or grill. When the burgers are almost cooked through, place the cheese slices on top and finish cooking (30 to 60 seconds). Remove the burgers to the serving plate. If desired, cover the plate with foil to keep burgers warm and moist.
3. Dress your burger on the bun with the lettuce, sliced tomato and onion, mustard, barbecue sauce, and ketchup as desired.
Yield:
4 servings

Check out Cook's Illustrated/America's Test Kitchen, they're like an university of "pro"fessors/scientists/cooks. They test and retest every possible technique, ingredients, and give you the results, good, bad and ugly. I own CIA school book, Thomas Keller The French Laundry, Le Cordon Bleu, I have over 30 cookbooks, but I mostly turn to them for advice.
Use ground chuck 80/20, it has that BIG BEEFY flavor.
ONLY FLIP ONCE, give it time to build that caramelized crust.
ONLY salt, and maybe pepper if you like. Nothing else, if you want it to taste like steak(that BIG BEEFY flavor).
oatmeal is great for retaining moisture in your ground beef recipes, and a good way to sneak in something healthy.
HAVE FUN!!ENJOY!

Paprika, cumin, garlic salt, beaten eggs, pepper and, parsley flakes mixed in with the meat. Form as flat as possible (mimicking the shape and size of the popular burger places) and turn frequently without using oil, although oil may enhance the taste a bit more.

Add a package of onion soup mix and one egg to your ground beef. Shape into patties and cook until just well done. Add slice of your favourite type of cheese and a slice or two of cooked bacon just before patties are fully cooked. Place on toasted hamburger buns and add toppings of your choice. My favourites are mustard, ketchup, relish, lettuce and tomato but mushrooms and fried onions are good too.

I like my mushroom and Swiss burgers.
Spike your hamburger meat with Worcestershire sauce, salt, pepper and fresh or dried thyme leaves. Form into patties and cook as usual.
Saute until nice and golden your sliced portabello mushrooms. Add a pinch of salt and pepper and a squirt of lemon juice when they are finished. Pile them on each burger and top the shrooms with a folded slice of Swiss cheese. Run the fully cooked and topped hamburgers under your broiler until the cheese is nicely melted.
I like to serve these burgers on a nice crusty kaiser roll with a balsamic mayo. Just add balsamic vinegar to your favorite mayo until it is a pale purple color. Add lots of ground black pepper. They are delicious!
