Try this one....

Orange-Yam Muffins with Pecan Streusel
12 Muffins

For Pecan Streusel
1/4 cup packed light brown sugar
1/4 cup all-purpose flour
1/2 tsp cinnamon
1/8 tsp salt
2 tbs cup-up butter
1/3 cup chopped pecans

For Muffins
13/4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
3/4 tsp ground ginger
1/2 tsp salt
1 cup mashed yam or sweet potato
1/3 cup packed light-brown sugar
1/4 cup honey
1/4 cup vegetable oil
1 tbs finely grated orange zest
2 large eggs, lightly beaten
1/2 cup low-fat buttermilk

1. Make Pecan Streusel: In medium bowl combone
sugar, flour, cinnamon, and salt. Cut in butter with pastry blender until mixture is crumbly. Rub mixture briefly between fingertips to blend butter. Stir in pecans. Refrigerate while preparing muffins

2. Preheat oven to 350 degF. Coat 12 standard muffin-pan cups with nonstick cooking spray or line with paper liners. In small bowl, combine flour, baking powder, baking soda, cinnamon, ginger, and salt.

3. In medium bowl, stir together yam, sugar, honey, oil, and zest. Beat in eggs and buttermilk until well blended. Stir in flour mixture just until evenly moistened. Spoon into muffin cup, filling each two-thirds full. Sprinkle streusel oven tops.

4. Bake until tops of muffins spring back when gently pressed, 20 to 22 minutes. Cool muffins in pan on wire rack. Turn out into rack. Serve warm or at room temperature.

You need:
3 Cups Self Raising Flour
1/2 Cup Brown Sugar
1/2 Cup Castor Sugar
3/4 Cup Orange Juice
2 Eggs
250gms Unsalted Butter, melted
3/4 Cup flavourings, fruits, nuts, chocolate

Method:
Combine all ingredients in a large bowl.
Do not over work the mix.
Do not add too much fruit or flavouring, as the muffins will collapse.

Bake at 150oC approx 15 minutes.

Allow to cool slightly before removing from the muffin tray.

To make savoury muffins
Cut the sugar to one third of recipe
