My hubby smoked our turkey this year. It's sooo good! We have a lot of leftovers and are looking for cool new recipes so we don't fall into the whole turkey sandwich trap. A patient of mine said he'd had a gumbo made with smoked turkey that was amazing. Anyone have any good recipes, like a gumbo or something else different, that we could try out to use up our leftovers? Complete recipes would be appreciated.

I love making turkey sandwiches they r so yummy! You just take your choice of bread toast it in the toaster and then add some ketchup to both sides and put in some turkey! It might sound strange but trust me it doesn't taste strange :) and its super fast if your in a rush...and another really good thing is turkey soup...you boil the bones to make the stock and then add the turkey whatever spices u like and some veggies and if u want some vegetable spice too

Try this one from Chef Alton Brown...

Turkey Re-hash

8 ounces breakfast sausage
1/2 onion, chopped
1/2 jalapeno, minced
1/2 cup red peppers, chopped
1 1/2 cups red bliss potatoes, cubed and cooked
1 1/2 cups cooked black beans
2 cups "Good Eats" Corn Bread Pudding, cubed, recipe below
1 to 2 cups cooked turkey, cubed
Dash cayenne pepper
Salt and pepper, to taste

Add the sausage to a heavy skillet over medium high heat and cook until the sausage begins to render some of its fat, about 2 to 3 minutes.
Add the onions, jalapeno and peppers to the sausage and cook until soft and translucent. Add the potatoes to the skillet and increase the heat to high. Cook until the potatoes have browned lightly.

Add the black beans, pudding, and turkey and stir occasionally. Cook until the hash is thoroughly heated. Season with cayenne, salt, and pepper.


Corn Bread Pudding

1/2 onion, diced fine
1-ounce unsalted butter
1/2 teaspoon thyme
1/2 teaspoon rosemary
1 (15-ounce) can creamed style sweet corn
1 cup heavy cream
2 eggs
1 teaspoon baking powder
1/2 cup yellow cornmeal, whole grain, stone ground
1/2 cup shredded Parmesan cheese
1 teaspoon kosher salt
Ground black pepper to taste
2 cups French bread, cubed

Heat oven to 350 degrees. Sweat onions with butter and herbs in an oven safe skillet until translucent.
Combine corn, cream, eggs, baking powder, cornmeal, Parmesan, salt, and pepper in a large mixing bowl. Add cubed bread and fold to combine. Pour batter into skillet, right on top of the onion mixture. Bake 50 minutes, or until set. Cool slightly before serving.

Yummy! Leftover animal carcass! Better eat it before rigamortis sets in. Do yourself, the environment and the animals a favor by vowing to not let you stomach be a graveyard for the remains of animals this year. The best thing to do with the carcass you have left s to bury it in the backyard or feed it to the cats.

CHICKEN OR TURKEY POT PIE BUBBLE BAKE
1 CAN (10 3/4 CONDENSED
CREAM OF CHICKEN SOUP
1 can cream of mushroom
1 1/3 CUPS MILK
1 TEASPOON ITALIAN SEASONING
2 bag REFRIGERATED NEW POTATO WEDGES EACH CUT IN HALF CROSSWISE
3 CUPS CUBED TURKEY OR CHICKEN
1 1LB BAG OF FROZEN any kind VEGETABLE
1 CAN PILLSBURRY GOLDEN HOMESTYLE BUTTERMILK BISCUITS
2 CUP SHREDDED CHEDDAR CHEESE
1) HEAT OVEN TO 375 DEGREES. SPRAY 13 X 9 IN PAN WITH COOKING SPRAY. IN LARGE BOWL MIX SOUP, MILK AND ITALIAN SEASONING. STIR IN POTATOES MEAT AND THAWED VEGETABLES AND 1CUP OF CHEESE.
2) SEPARATE DOUGH INTO 10 BISCUITS CUT EACH INTO QUARTERS ADD TO MIXTURE. STIR GENTLY TO MIX - SPOON INTO BAKING DISH.
3) BAKE UNCOVERED 35 TO 40 MIN. OR UNTIL TOP IS DEEP GOLDEN BROWN AND BISCUITS ARE NO LONGER DOUGHY INSIDE SPRINKLE WITH REMAINING CHEESE. BAKE 4 TO 6 MIN. LONGER OR UNTIL CHEESE IS MELTED.
