I ate muenster cheese at Christmas that didn't have the orange siding(i guess thats what you could call it). Yesterday I had some with the orange siding with some ill effects. Mind you, I have been eating muenster, or monster, cheese all my life, its my favorite

I believe it is paprika, it doesn't affect the flavor much, it is just for aesthetics. And no, it is not wax, that is only on Edam, or some cheddars

I believe it is also for a special look. the same as putting paprika on deviled eggs. not so much for taste as much as for appearance.

They rub paprika on the outside of it to give it that odd orange color.
