www.allrecipes.com lets you scale the recipes down or up. That's where I'd start. If you want to get a cookbook, I have one here called Healthy Cooking For Two (or just you). It has some great recipes.
(I know how you feel, my mother seemed to always cook the same things over and over. Maybe that's what wanted to make me learn too and become a cook?)

There is no such thing as a healthy diet without vegetables. Spend $20 in fruit and vegi mart. Try to make a minestrone soup. Learn to cook vegi's or combos of vegies so that you'll like them. Try split pea soup. Get a frozen spinach cook ten min. drain water add little butter and garlic little Parmesan. Good Parmesan, grated as needed will last for a year if wrapped tight, and will enhance many vegie dishes. For budget and health, learn to eat veggies. By the way. i am not a vegetarian. You can always buy individual dinners, but if you'd rather cook, you can buy one red or green pepper, depending on what your preference is, one small onion, and two sausages. Chop peppers and onions, and put in a frying pan with sausage, with a little olive oil. While cooking, season with salt and pepper, and for a little bit of an interesting and exciting flavour, use mexican seasoning. Enjoy!
