Grill the gammon and serve with either boiled potatoes or chips, peas and or other vegetables, lightly grilled tomato. Traditionally gammon is served either with pineapple rings or with a poached or fried egg. Probably not a good idea to have ham as a starter if you are serving gammon. Maybe you could serve prawn cocktail or an avocado salad. Pate with toast is popular too. For dessert you could do anything. If you're staying traditional you might like to serve apple pie with cream or treacle pudding with custard. With a turkey it really depends on the size and weight of the bird. Generally supermarket turkeys come with cooking instructions. Very much like cooking a chicken - just takes longer.

SWEET REDCURRANT ORANGE AND PORT SAUCE
THE EASY WAY BY A CHEF LECTURER
WHAT YOU NEED
1/2 pint ready made gravy
1 dessert spoon red currant jelly
1/2 glass port
zest of 1 orange
few frozen red currants
1 heaped t-spoon brown sugar
100ml orange juice
small onion diced thinly
METHOD
sweat onion in a little oil until soft
add rest of ingredients and gently simmer for about 10Min's
check the seasoning and serve
in the trade we would normally add cold sliced gammon to a frying pan pour on some sauce and gently heat through

This is an Irish recipe:
Gammon (Ham) Steaks with Whiskey Sauce
4 Gammon (Ham) steaks
2 Tbsp finely chopped onion
1 Tbsp Brown sugar
1 Tbsp Whiskey
1 oz Flour
1 oz Butter
3/4 c Water or stock
Salt or pepper to taste
Brush steaks with melted butter. Snip fat to prevent curling, and grill for 7-8 minutes each side. To make sauce, gently fry onions in remainder of butter until cooked. Remove from heat and stir in flour gradually. Add stock. Return to heat. Add brown sugar and bring to the boil. Simmer gently for about 2 minutes to cook flour. If sauce seems a little thick, add more water. Add whiskey and season to taste. Place gammon steaks on a warmed serving platter and pour on sauce.

I think parsley sauce is best with ham, however you could make a mustard sauce but not everyone likes mustard ????????????
