It does not follow that the story of Adam and Eve was written by Moses simultaneously with their existence. It was written after it had happened. Even the creation of the world was written by Moses. That does not mean that Moses was already there at that instance. Moses was able to write down, even if he was not there, because it was dictated to him by the Holy Spirit. Thus, Moses wrote down events that happened before his existence. This was written in 2 Peter 1:21: and it states: " For the prophecy came not in old time by the will of man: but holy men of God spake[as they were] moved by the Holy Ghost."
Because of the Holy Spirit of God, the prophets were able to speak and write.

It is not biologically possible for there to have been only 2 people. The human genome is compressed but there had to be at least hundreds of individuals back hundreds of thousands of years. Most likely even the compression that seemed to be indicated in genetic studies is exaggerated by evolutionary pressures. Adam and eve is just a story and it isn't accurate. It never happened.

Moses wrote Genesis. Moses learned a lot up there on that mountain with God. They used clay tablets and symbols. Archeology has found a lot of them. Moses for his first 40 years was a Pharaoh's son and an educated man. During the wilderness wanderings would have been the best time for him to have written the first 5 books of the Old Testament. He certainly had access to the tri-unity of God.

Moses wrote the 1st five books of the Old Testament (the Torah) by inspiration from the Holy Spirit.
Some believe that Joshua finished Deuteronomy, also under inspiration of the Holy Spirit, because Moses dies by the end of Deuteronomy.

The way history was passed from generation to generation was by word of mouth. The story of Adam and Eve wasn't just WRITTEN (made up), it HAPPENED. Traditionally, Moses was assumed to be the author and editor of most of the Pentatuch (first 5 books of the Bible).

Hebrew creation mythology came about by borrowing and blending the mythology from the earlier civilizations of the Summerians, Assyrians and Babylonians. It was spread by oral tradition for thousands of years before being written down.

no one knows.... hell, for all we know it could have been some fat guy randomly righting crape the thought had happened, but it was just a thought in his head
no one can prove that any of this has happened. i believe some things in the bible, are true.... but not everything
