We have 4 players who compete for a family trophy and the ages of the players are widespread. So we wanted to try and make this as fair as possible. We play at different coarses, but it is the same players all of the time.

total score divided by number of HOLES played.

Well, an average is obtained by dividing the sum of a set of quantities by the number of quantities in the set. So, take one person's scores for all of the games played, add those scores together, then divide by the number of games played. Do this for each person that played and you will have their averages.
