This is an easy and unusual recipe that people really like when I bring it to potlucks.
Taco Salad
1 lb. ground beef, cooked and drained
1 envelope taco seasoning mix
4 medium tomatoes, chopped
1 small can black or green olives
1 small onion, chopped
1 bottle Russian salad dressing
1 bag Fritos or other corn chips
1 pk. shredded Cheddar or Mexican cheese blend
Optional additions for serving:
Salsa
Chopped green onions
Sour cream
Guacamole
Add the taco seasoning to the ground beef to taste. Mix well with the tomatoes, olives, and onions. Moisten thoroughly with Russian dressing.
Crumble most of the Fritos, reserving some for garnish. Add to the ground beef mixture, and adjust the amount of Russian dressing. (Mixture should be moist but not runny.)
Place in a large casserole dish, and cover with the cheese. Garnish with the reserved Fritos, and chill. The salad is great as is, but adding one or more of the optional sides makes it even better!
Makes 6 to 8 servings.
