I have a 8" Santoku knife from Wusthoff that I absolutely love for cutting vegies or fruit and for chopping. The handle has a nice feel and it is a good weight, easy to control. They retail at most places for $89 but it will last you a lifetime. Also, you can get one a little cheaper on Amazon.
My second favorite knife is a Wusthoff 4" utility knife. I use it like a paring knife and for cutting meat. Also not cheap, about $40, but very well made and will last forever if you take good care of it.

We got the Wustof Santoku knife as a wedding present and it is seriously the best knife I've ever used. We use it for everything from meats to veggies. It's originally used for asian cooking but its become really popular because of how well it cuts and its versatility, as well as how sharp it stays. Most of the chefs on the food network use this type of knife on thier shows. If your looking for a new chefs knife, I would highly recommend a santoku.

i agree poster above about the Wustoff santoku knives. I used to love my 8" chefs knife, but find the blunt tip of the santoku is way better for chopping everything from meat to veggies. it stays on the cutting board better.

I have a 8" santoku that I refuse to part with. I use it everyday. I also have a 10" Dexter-Russell that's eons old, but it's sturdy and all I have to do is get it resharpened every year.

The best knives in the world are made by the Germans, ...Wustoff.( not sure about the spelling... sorry). You'll pay dearly for one though, but you won't regret it.
I have Sabietier and am very pleased. They hold an edge very well.

I have been in kitchens a while. First a sturdy blade, one that doesnt flop all over the place. Second ,one that you find comfortable with as far as the size and grip. Dont get hung up with the expensive Henckels and other top of the line German knives. Find one your happy with.
