AlwaysOverPack has a point, that the fiber is why we should eat beans; however, beans are harder to digest than necessary if they're undercooked. If you are using dried beans and preparing them yourself, soak them overnight in the refrigerator. SLOW SIMMER, covered, for a LONG time, and I'm not kidding. The last time I made beans I cooked them for about 36 hours. You have to watch them and make sure they don't burn, and that means putting them on the lowest fire possible. If your stove can't handle it, use your oven on a very low setting. You could also use a pressure cooker or a crockpot.

It's the fiber in the beans that take more to digest... thats the health benefit. remove or break down the fiber and you lose the nutritional benefit.
