I love rice and it is so versatile- can do so much with it. I usually boil my rice (long grain white). After the rice is cooked, I take some chicken or beef boullion, pour over it about 1/2 cup, a little butter, add the garlic, shallots, I put lemon juice and Emeril's original essence (heavy on the essence) if you like spice it is great!. I usually put this underneath fried chicken cutlets, also doused with Emeril's seasonings and lemon. It's really Kicked up!
According to what type of cheese you planned on using, if it is a semi-soft cheese like mozzerella, it is also good in the rice! Happy New Year!

Hmm.. you really shouldn't be giving the rice a capital letter at the end of the sentence.
Anyway here's what you can make assuming that's what you want with the given ingredients only available.
Wash two cups of rice. Remove the water.
Hot water in a pan and turn off till you need it.
Chop the shallots and half a chilli pepper finely. Crush garlic (3 cloves).
Brown the shallots, chilli and garlic altogether in medium sized pan, over medium heat in a little cooking oil- about china cup full. Leave until reddened, don't worry if they are very red- it's fine.
If you have a cube of Maggie stock ( add now and let it melt) , then stir- over low heat now. Add 2-3 cups of the hot water ( enough for rice to absorb). Add three eggs in with shells ( wash them first). Add 2 teaspoons of salt. Let it simmer for a couple of minute.
Note: Now warm oven and leave the rack on last level of oven.
Now, add the rice to the pan ( don't worry about the eggs but stir carefully) Put the heat a teeny bit higher and cover. Wait till rice has almost absorb the water, it should be bubbly on top.
Leave in oven for about 15-20 minutes till rice has absorb the water further- you can add more of the hot water it it needs a little more. Turn off- leave in oven.
Chop the parsley finely and bell peppers in strips. Add a little salt and flavouring of your choice, like soy sauce for example.
Take the pan out of oven and carefully remove the eggs which will still be in their shells. Remove shells and cut eggs into wedges ( length wise) . Put rice on platter, sprinkle parsley and pepper seasoning on top of rice, decorate with egg wedges on top.
I didn't add cheese as cheese doesn't go well with rice. You can however sprinkle this over a salad.

Go to the store and trade in everything but the peppers and the shallots. Get an onion and fresh mushrooms. Finely chop all and sweat in a pan with a little butter. Add rice, water, and a chicken bullion cube and cook till rice is done (all water absorbed). and eat it all as it is soooooo gooooood.

I'd saute shallots and garlic, pour a bit of white wine (if you have it) into the pan, cook it down, then throw in a bit of chicken stock and then the rice, cook it until the stock is absorbed and the rice is done. If you've parmesan cheese, throw a bit of that in after it's all cooked, and stir together....maybe some parsley as well for garnish.

You can liven it up by stir frying the rice and adding peppers, garlic and cheese with some soya sauce. When stir frying it makes it very tasty

HI!
WELL. LETS GO!!!
CUT UP YOUR CHILLIES QUITE SMALL. PUT YOUR RICE ON AND THEN ADD THE CHILLIES TO YOUR RICE -AS MUCH CHILLIES AS YOU CAN HANDLE.
WHILE THE RICE IS COOKING:-
CRACK YOUR EGGS IN A BOWL AND BEAT THEM. CUT UP YOUR GARLIC, PEPPERS, SHALLOTS AND PARSLEY VERY, VERY FINELY. PUT THEM TO ONE SIDE.
IN ANOTHER PAN-PREFERABLY A FRYING PAN- WITH A LITTLE OIL FRY YOUR GARLIC -NOT TOO MUCH- THEN ADD YOUR EGGS (SHOULD BE AT LEAST 4-6 EGGS) COOK THEM AS IF YOU WERE DOING SCRAMBELED EGGS. BY THIS TIME YOUR RICE SHOULD BE COOKED.
ONCE YOUR RICE HAS COOKED ADD IT TO THE FRYING PAN WHERE YOUR EGGS AND GARLIC ARE AND THEN ADD ALL OF YOUR OTHER INGREDIENTS. MIX ALL OF THE INGREDIENTS TOGETHER VERY CAREFULLY.
PLEASE NOTE THAT THE HEAT DOES NOT NEED TO BE UNDER THE FRYING PAN AT THIS MOMENT BECAUSE WHAT WE WANT TO DO IS TO TASTE ALL OF THE LOVELY INGREDIENTS TOGETHER. ALL YOU NEED TO DO IS JUST POP THE LID OR A PLATE ON TOP OF THE FRYING PAN AND LET THE HEAT FROM THE RICE AND THE EGG SLOWLY INFUSE THE OTHER INGREDIENTS TOGETHER BY THEMSELVES.
WHILE THIS IS DOING JUST GRATER YOUR CHEESE AND WHEN YOU SERVE YOUR LOVELY BRIGHTLY COLOURED FOOD JUST SPRINKLE A LITTLE CHEESE ON TOP - CHEESE AND RICE GO LOVELY - .
THIS IS A LOVELY AND TASTY DISH AND ONE THAT IS VERY SIMPLE, EASY AND QUICK TO PREPARE. ALSO IT IS VERY HEALTHY AND YOU WILL BE GETTING ALL OF THE LIVING ENZYMES THAT ARE FOUND IN THE FOODS AS THEY HAVE NOT BEEN COOKED OR BOILED OUT. PLUS IT'LL LOOK SO HEALTHY AND GREAT ONCE DISHED UP ON YOUR PLATE.
I HOPE I HAVE BEEN OF SOME HELP AND I HOPE YOU ENJOY THIS LOVELY DISH.
HAPPY HEALTH EATING!!!!
