My mom used to make them when I was a kid. She used to put a slice in the bologna so that it didn't turn into a boob. They were yummy.

Fried bologna sandwiches are classic American cuisine and should be considered for all government banquets.

We actually go a step further and take a 5 lb. chub of bologna and put it on the smoker for several hours, using hickory chunks for flavor, then cut into thick slices and fry. My husband and I have a major difference of opinion for condiments...I love spicy mustard & sliced onion, but he's a mayo guy all the way.

It's funny I came across this question because we are smoking a bologna today to go with our black-eyed peas. Happy New Years!

Yum! Lauriek, they do look like boob, I never thought of that. Lol
It would be a lot less expensive than the stuff they do serve, but I suppose the lowly fried bologna sandwich is not good enough for our gubment reps to eat. I like mine with lettuce and tomato.
