Reasonable question, to which, admittedly, 'use a lid' is a reasonable answer -- and yet, thumbs-down.

I take it some people are pretty hung over, and cranky, right now...

You need a splatter screen! The website below shows a picture of two of them. They are really handy to have in the kitchen to protect your counters and stove from getting really sticky and disgusting. The pair from Linen's and Things is $10, but you can probably search around for some cheaper prices (check Wal-mart or Target).

It's nearly impossible! I try to get all the liquid out of whatever it is I'm frying. That's a start. Try reducing the heat, too! That helps, putting a lid on it will only make the food soggy.
I've never tried one of those screens but, sometimes I think I might try it.
I sometimes put a lid maybe halfway over the pan too and that helps.
If you want crispy foods though, I think you'll have to put up with a little spatter!

Go to Wal Mart, or where ever, and buy a "Splatter Screen". It is sold in housewares, on the same aisle as measuring cups, spatula's, and plastic mixing bowls. They come in a set of 3 for different size fry pans.

dry off what ever you are cooking
if you are cooking fries
first place them in your clothes dryer for about twenty minutes
them drop them in to the deep fryer
or maybe you want to use a hair dryer that might work
or if you just hate cleaning up the mess it makes
stop frying things

Water will make the oil splatter when it is heated. Make sure the pan you are using is completely dry of water before adding oil to heat up.
Also, make sure the food item is dry from water too before adding to hot oil.

Get a "splatter screen" - it's a fine mesh cover that goes over the pan. You can pick them up in any grocery store.

either use a lid with a hole in it so that steam can go out, or use a chip or deep fryer
