It does have blue streaks running thru it. Which is actually mold. So when you eat it, it is mold your eating. Thats why it smells so bad. But I am told it is "good mold"...but still mold is mold and I aint touching the stuff. And I guess calling it blue cheese was more presentable than to call it moldy cheese!!!

Blue cheese has blue streaks through it that are the bacteria used to make cheese and is also one of the good bacteria found in your digestive system. So it is healthy the same way yogurt that still has it's bacteria culture is healthy.

PS. it ain't mold.

Blue cheese has those blue veins of mold in it.

there is copper in the cheese the copper gives it sorta blue lines in it. the copper is also why bluecheese has a bit of a bitter taste

that cheese you are talking about is depressed because it has gone moldy...that's what gives it the blues...
