The programs to which you refer are loyalty programs which almost every airline maintains. By receiving points, or miles, for each flight you take with a given airlines, you can begin to accumulate credits in your account which may be used towards an award in the future. Usually, this award is a free flight on that carrier. Joining these programs is almost universally cost free to you and can be accomplished very quickly on the airline's website.
In choosing which of the many programs to join, it is best to concentrate on those carriers that you fly most frequently so that your account with them will grow as quickly as possible. The websites will explain how you can get credit for other activities (such as using a dining at certain restaurants or using a co-branded credit card) as well as rules for using the miles or points that you earn.

Go to the relevant airlines website and all information is on there.

each airline has it's own system. Some airlines are linked, for instance KLM and Air France. Where air miles gained on these airlines are valid for both.

happy travelling and a happy new year

One of the places to check is (believe it or not!) NatWest. They give airmiles points on their accounts, so it would be as good a place to start as any.
